Baking was on in the kitchen today - Apple muffins!

      This morning I had that feeling that I "needed" a muffin.  So I decided this is a perfect day to work on an Apple Muffin recipe.  Most of you that know me realize that this just can't be any kind of muffin.  It has to be grain free, sugar free and packed with good fats and protein.  

      The recipe turned out amazing.  It tastes like the perfect moist muffin with the perfect amount of apple flavor.  These will be a new staple in my kitchen.  I look forward to the day when these can be on the front desk!!!

 

Ingredients

  • 2 c. FlapJacked Protein Pancake and Waffle mix - Buttermilk
  • 1/4 c. Lakanto
  • 1 t. cinnamon
  • ½ c. applesauce (I used 3 individual servings of apricot applesauce)
  • ¼ c. almond milk
  • 1 egg
  • 2 T. coconut oil
  • pinch of sea salt

 

Instructions

  1. Combine FlapJacked Protein Pancake and Waffle mix, ¼c. Lakanto and 1 t. cinnamon.
  2. Stir in applesauce, milk, egg and oil until well mixed.  I used a hand mixer to mix the batter.
  3. Fill greases muffin pan ⅔ full.
  4. Back at 400 for 15-20 min.  ENJOY!!!
